A few things the table can’t hold:
- The dome exists to protect margin, not just looks. Toppings are the highest-margin line on an ice cream menu, and a flat lid flattens them. If you charge for whipped cream, sauce, or brownie chunks, the dome is what lets the add-on survive the walk to the car.

Four things to read out of that table before you write a purchase order:

How many minutes do you have? The delivery melt math
Plan delivery around a 30-minute window from freezer to doorstep, and buy every extra minute with packaging, not hope. Ice cream doesn’t fail at the doorstep; it fails minute by minute along the whole chain, so the math has to start at the freezer.
The freezer-to-doorstep chain
A delivery order of ice cream passes through four temperature zones, and each handoff costs you product quality:
- Storage freezer, −18°C. The cup itself has to survive here — PE-coated paperboard stays rigid down to −18°C, which is why PE is the default coating for freezer-held stock.
- Scooping cabinet, roughly −12 to −14°C. Ice cream is held warmer than storage so it scoops cleanly — which means it leaves the counter already closer to melting than the stock in the back.
- The wait-and-ride. Order packed, courier assigned, bag on a bike. In summer this zone is 25–35°C and it’s where the product loses the fight.
- The doorstep. Whatever texture arrives here is your review.
The working numbers: a single 4oz scoop packed at serving temperature starts visibly softening after roughly 10–15 minutes at a 25°C ambient, and loses its shape entirely around the 30-minute mark — numbers vary with recipe, fill size, and local ambient, so run a timed pack test before promising delivery radii. An insulated courier bag with a frozen gel pack roughly doubles that window. Larger fills last longer than small ones — a packed 16oz cup has far less surface area per gram than a 4oz single scoop — so minis are your most melt-fragile SKU, not your safest.
What that means operationally:
- Cap the delivery radius in minutes, not kilometers. If your platform’s average pickup-to-doorstep time is 22 minutes, an uninsulated bag is already eating your margin in refunds.
- Pack from below serving temperature when you can. Pre-packed cups pulled straight from −18°C stock buy back roughly 5–10 minutes versus cups scooped to order.
- Spec flat lids for anything that ships. Flat-lidded cups stack tight, don’t pop against bag walls, and hold less warm air above the product.

The fog inside the lid
Here’s a failure most buyers never see coming: condensation. Seal warm, humid shop air over a −12°C product and the moisture in that trapped air condenses on the coldest nearby surface — the underside of the lid. On a clear dome it shows up as fog that hides the scoop you paid a dome to display. In a freezer it refreezes as frost and drips ice crystals onto the surface of the product.
Three habits keep lids clear:
- Minimize headspace. A flat lid over a properly filled cup traps very little air — one more reason flat wins for delivery and pre-pack.
- Lid cold, not warm. For pre-packed stock, cap cups in the cold room rather than on a warm counter, so there’s less humid air to seal in.

Flat lids earn the retail slot on three counts.
